Slow cooker soup recipes are my favorite all year long but especially during fall and winter. And this easy slow cooker corn chowder is no exception.
Soups like slow cooker sweet tortilla soup (SO good), copycat Cafe Zupas Wisconsin cauliflower soup, and my family’s favorite creamy chicken and rice soup are soul warming. Pair with a salad and light & fluffy one-hour dinner rolls for a hearty, weeknight meal!
How can you not love a slow cooker soup where the only real work is peeling and cubing the potatoes? Everything else in this corn chowder slow cooker recipe is pretty much tossed or sprinkled in (except for the half and half—that would be messy!) followed by that whole set-it-and-forget-it thing for which your slow cooker is famous.
Speaking of slow cookers, mine is not programmable and I’m considering buying a new one that is, especially since I’m starting a full-time job and would love to have dinner ready when I get home. That sounds super delightful!
The reviews on this Hamilton Beach 7-quart programmable slow cooker look good and at less than $40, I’m pretty sure it needs to be an early Christmas present to myself.
We have a family of six so I tend to double recipes. If you are more like a family of four, I’d still double this slow cooker corn chowder with bacon and enjoy leftovers throughout the week.
But if you don’t love leftovers or you have even fewer people you’re feeding, try halving your slow cooker corn chowder recipe. Or you could still do the full batch and freeze leftovers!
I love adding bacon to pretty much everything, but if you’re vegetarian, you could totally make slow cooker corn chowder without the bacon. It will still be full of creamy, corn flavor!
Similar to some of my other favorite slow cooker soup recipes, this easy slow cooker corn chowder calls for ingredients I usually have on hand (minus the potatoes… for some reason we don’t eat a ton of those). I love recipes where I can grab things from my fridge and pantry and go!
I’m pretty sure I’ll be making corn chowder in my slow cooker a lot more often after my family fell in love with this recipe!
- 6 cups potatoes, peeled and cubed
- 4 cups frozen corn
- 2 cans cream style corn, (14.75-oz each)
- 1 package real bacon pieces (3-oz package or 3/4 cup)
- 1 T sugar
- 1 T Worcestershire sauce
- 2 tsp seasoned salt
- 1/2 tsp pepper
- 2 cups half and half
- Place potatoes, corn, creamed corn, bacon, sugar, Worcestershire sauce, seasoned salt, and pepper in slow cooker. Cook on high 3 to 4 hours or until potatoes are fork tender.
- Add half and half and cook an additional 15 to 20 minutes or until heated through. Serve topped with bacon pieces, chives, sour cream, shredded cheese, etc. if desired.
