    For people who don’t know what Masago is, it is simply the eggs of the capelin fish. Capelin is a type of foraging fish that frequents the world’s cold-water regions, namely the Arctic, North Pacific, and North Atlantic.

    Many people think that Masago is like caviar but this is wrong. Caviar and Masago are indeed both fish roe (fish eggs), but only the roe from sturgeon fish is “true caviar.” As a result, Masago is not caviar.

    Masago comes in an orange-yellow color, and it is usually used as a sushi topping or with salad or in a sauce like today’s recipe.

    One of the most famous Masago sauces is the Japanese Masago sauce, which is made with Kewpie mayonnaise and Huy Fong Sriracha sauce. It’s an easy and quick Masago sauce recipe that you can serve with many dishes.

    Where to Buy Masago Sauce

    I didn’t find any ready-made sauce that contained Masago when I searched online. You can only buy Masago to make your own sauce at home. You can find Masago in Walmart and other supermarkets in the USA or Canada.

    Masago Sauce Ingredients

    • 2 tablespoon Kewpie mayonnaise or other mayonnaise
    • 2 tablespoon Huy Fong Sriracha sauce
    • ½ fresh lime
    • 2 teaspoon fresh Masago roe

    How to Make Masago Sauce

    1. In a medium bowl, stir the mayonnaise with the Sriracha until combined.
    2. Stir the juice of half a lime into the mayonnaise mixture.
    3. Stir the Masago roe into the mixture until combined.

    While you can also freeze Masago sauce, I don’t recommend it. However, you can freeze Masago roe on its own, which should last 6 months in the freezer.
