One of the best things about this easy bruschetta chicken is how much my kids like it, and they’re not fans of tomatoes (unless they’re in salsa).

- 1 (14.5-oz) can Italian-style diced tomatoes
- 2 cloves garlic, minced
- 1 (6-oz) package Stove Top Stuffing Mix for chicken
- ½ cup water
- 1 ½ pounds boneless, skinless chicken breast cut into bite-size pieces
- 1 teaspoon dried basil
- 2 cups shredded mozzarella or monterey jack cheese
- Preheat oven to 400 degrees.
- Combine tomatoes, garlic, stuffing mix, and water in a medium bowl. Stir just until stuffing mix is moistened; set aside.
- Place chicken in a 9x13-inch baking dish and sprinkle with basil and cheese. Top with stuffing mixture.
- Bake 30 minutes or until chicken is cooked through.
