    What Exactly is Prime Rib?

Prime rib is a classic roast from the beef rib primal cut, including ribs 6 to 10. This area, also where ribeye steak cuts come from, is well-marbled, and utterly delicious.

The word “prime” is a legal designation that refers to the fact that the beef has been graded prime by the USDA.

When you buy prime rib, try to ask the butcher to cut the roast from the loin end of the rib section (also known as the “first cut”). Usually, the loin end is a bit less fatty (though, still well-marbled) and more tender.

Why is Prime Rib So Expensive?

Prime rib costs about $17 a pound while choice-grade prime rib goes for about $13 a pound. The prime rib is naturally higher in price because it is considered a better cut of meat.

How Long Should You Cook Prime Rib at 250 F?

In a 250 F oven, prime rib will take 3 ½ to 4 hours to cook. Then, once cooked, you should remove the roast from the oven, tent it loosely with aluminum foil, and place it in a warm spot in the kitchen to rest for at least 30 minutes.

Another Method for Cooking Prime Rib

For this method, start by preheating the oven to 500 F. Then, cook the prime rib at 500 F for 15 minutes. Then, you should lower it to 325 F and cook for 10 to 12 minutes per pound for rare prime rib, 13 to 14 minutes per pound for medium-rare prime rib, or 14 to 15 minutes per pound for medium-well prime rib. A meat thermometer is essential to ensure you cook it perfectly!
