    Gordon Ramsay’s Meatloaf

    When the Roman cookbook “Apicius” was published, one of its recipes was a concoction of chopped meat, wine, and bread pressed into patties. This is the first known reference to the dish that we know as “meatloaf” today. Gordon Ramsay’s meatloaf recipe is made with ground beef, although you could use ground lamb, pork, veal, venison, or poultry as well if you like. When your meatloaf is cooked, you can slice it like a loaf of bread to make individual portions and serve them to your family or guests. Here is how to make Gordon Ramsay’s meatloaf.

    Eggs are an ingredient that you can find almost in every meatloaf, and they have two distinct roles. The first is that they have a good amount of protein and fat, which adds flavor, richness, and moisture to Gordon Ramsay’s meatloaf recipe.     • 2 teaspoon canola oil
    • ½ sweet yellow onion, finely diced

    • Sea salt and freshly cracked pepper, to taste
    • 1 cup marinara sauce

    1. Preheat the oven to 350 F and spray a loaf pan with cooking spray.
    2. Heat the oil in a skillet and heat it over medium heat.
    3. Add the onions, peppers, and mushrooms to the skillet and cook the mixture, while stirring often, for about 5 minutes or until the vegetables are tender.
    4. Add the minced garlic and let it cook for about 1 minute while stirring constantly.
    5. Remove the skillet from the heat and let the vegetable mixture cool.
    6. In a bowl, combine the ground beef with the breadcrumbs, Parmesan cheese, eggs, basil, oregano, Worcestershire sauce, and balsamic vinegar along with the onion mixture.
    7. Season the mixture with sea salt and freshly cracked pepper to taste.
    8. Gently combine the meatloaf mixture until it is evenly mixed, but make sure you don’t overmix it.
    9. Press the mixture into the loaf pan and spread the marinara sauce evenly over the top of the loaf.
    10. Bake the meatloaf in the oven for 1 hour or until a meat thermometer inserted in the center reaches 160 F.
    11. Remove the pan from the oven and let the meatloaf rest for 5 to 10 minutes before you slice it and serve it.

    What Does Milk Do in Meatloaf?

    The reason milk is added to meatloaf is that it soaks into the breadcrumbs, adding moisture to the meatloaf. If you personally do not want to use milk, you can also use low-sodium beef stock, chicken stock, water, or a non-dairy milk substitute.

    Gordon Ramsay’s Bacon-Wrapped Meatloaf Ingredients

    • 10-12 strips of bacon
    • 2 lbs lean ground beef
    • 1 cup diced onion
    • ½ cup diced green bell pepper
    • 2 cloves garlic, minced
    • 1 tablespoon Worcestershire sauce
    • 2 large eggs
    • ½ cup rolled oats
    • 1 teaspoon kosher salt
    • 1 teaspoon black pepper

    Ketchup Glaze:

    • ⅓ cup ketchup
    • 2 tablespoon brown sugar
    • 1 teaspoon paprika

    1. Preheat the oven to 350 F. Line a 9 x 5-inch loaf pan with some of the bacon so it slightly overlaps, lines the bottom and comes up the edges of the pan.
    2. In a medium-sized bowl, mix the beef with the onions, bell pepper, garlic, Worcestershire sauce, eggs, oats, salt, and pepper.
    3. To make the ketchup glaze, mix the ketchup with the brown sugar and paprika.
    4. Spread 2 tablespoon of the ketchup glaze over the bacon in the loaf pan.
    5. Press the meatloaf mixture into the pan.
    6. Fold any overhanging bacon over the top of the meatloaf.
    7. Place the loaf pan on a baking sheet lined with foil or parchment paper.
    8. Top the loaf with the remaining bacon until covered.
    9. Bake the meatloaf for 50 minutes; then remove it and brush it with the ketchup glaze. Return it to the oven for another 15 to 20 minutes.
    10. The finished meatloaf should have crispy bacon edges and an internal temperature of 165 F.
    11. Let the meatloaf rest for about 10 minutes before slicing and serving it.

    The main cause of a mushy meatloaf is when you have too much bread and milk in the mixture for the amount of meat. Here are two tips so you can make a meatloaf that isn’t:

    • Reduce the amount of bread and milk by half.
    • Double the amount of meat.

    1. Preheat the oven to 350 F (175 C). Lightly grease a loaf pan.
    2. In a bowl, mix the ground turkey with the buttery round cracker crumbs, onion, egg, milk, salt, garlic, and pepper until combined.
    3. Shape the mixture into a loaf and place it into the prepared loaf pan.
    4. In another bowl, mix the ketchup with the brown sugar, and Worcestershire sauce until combined.
    5. Bake the meatloaf in the preheated oven for 30 minutes. Then, remove it from the oven and drain off the liquid.
    6. Top the meatloaf with the ketchup mixture.
    7. Return the loaf to the oven and let it continue baking until it is no longer pink in the center and an instant-read thermometer inserted in the center reads 160 F (70 C).
    8. Let the meatloaf rest for 10 minutes before slicing and serving it.

      I used the recipe for the bacon wrapped version. It has been 50 minutes at 350 degrees, plus the 15-20 (turned into 20), and it is STILL not done inside. I hope whoever uses this recipe is smart enough to use a thermometer. All that time and it’s only at 145. It smells amazing, but times need to be adjusted. I usually cook mine at 375. And the bacon doesn’t really get crispy being soaked in sauce. But bacon is the duct tape of food so I am not sad about that one!

        The real secret is not the time because it will change from one oven to another, I recommend really using a meat thermometer in these cases or you will end up with a piece of meat that you won’t really like.
        After all, there is no exact cooking time, it is just approximately. but as you said, you need to be smart enough to use a thermometer.

      Okay update after it was finished and eaten. It was so tasty!! I would use my OG glaze next time, but it was worth the wait for it to be done! Ended up being an hour and a half cook time. No higher oven temp though, or the bacon would have burned.
