    If you adore dynamite sushi rolls and have always wanted to make them at home, this dynamite sushi roll recipe is the best. These dynamite sushi rolls are made of tempura shrimp, avocado, cucumber, and a mixture of hot sauce and maple syrup. They make a great appetizer or easy lunch with their vibrant flavors.

    What is a Dynamite Roll Sushi?

    A dynamite roll is a type of Western-style sushi. It usually contains tempura shrimp accompanied by some sprouts, avocado and/or cucumber and some mayonnaise. Many sources said that the dynamite roll was invented at Octopus Garden in Vancouver, British Columbia by a man referred to as Sara-san. Wikipedia

    You can make dynamite roll sushi in less than 30 minutes. Just like Boston rolls or California rolls, dynamite rolls are an inside-out type of sushi, where the rice is on the outside and the nori is on the inside, wrapping the filling. It’s similar to Las Vegas roll, in that it uses tempura shrimp as a main ingredient.

    Are Dynamite Rolls Healthy?

    Just like Vegas rolls or Boston rolls, dynamite rolls are healthy. In fact, they include protein, fiber, and sodium. However, dynamite rolls are high in calories because of the tempura shrimp. If you would like to make a light dynamite roll for fewer calories, I recommend that you cook the shrimp in an air fryer without oil, or use boiled shrimp.

    What are Dynamite Rolls?

    Dynamite rolls are sushi made of tempura-fried shrimp, cucumber, avocado, and mayonnaise. Many dynamite roll recipes include a spicy sauce and maple syrup. However, you can also add jalapenos or mango. Here are the typical ingredients in dynamite rolls.

    • Cucumber: This is not a necessary ingredient so you can avoid it if you want. However, if you want to add cucumber, I highly recommend that you use Japanese cucumbers which are long and slender. Avoid using American cucumbers because they have thick skin and too many seeds inside.
    • Sushi Rice: Use high-quality short-grain rice and cook it in the Japanese way, which means steaming the rice and adding sushi vinegar. Some of the best sushi rice brands that I’ve used are Lundberg Organic California Sushi Rice, Botan Calrose Rice, and Nishiki Premium Grade Rice.
    • Nori Sheets: You can find nori sheets in almost any supermarket in the USA or Canada, in the Asian food section. Alternatively, you can buy them online from Amazon or Walmart.
    • Tempura Batter: To make tempura batter, break and whisk one egg. Then, add flour, cornstarch, and curry powder with some baking powder, and mix them with ice water to make a thin batter. 
    • Tempura Shrimp: Tempura shrimp are the main ingredient in these dynamite rolls. To make it, clean the shrimp, coat them in tempura batter, and then fry them. Alternatively, you can cook tempura shrimp in the air fryer if you like.
    • Dynamite Sauce: Dynamite sauce is made of olive oil, mayonnaise, Sriracha hot sauce, and roasted sesame oil.
    • Maple Soy Sauce: It’s a great combination of organic maple syrup and soy sauce. This sauce will give the dynamite rolls a sweet flavor.
    • Mango: It’s optional to add mango slices to the dynamite rolls, but it works well with the avocado and cucumber.

    Dynamite Roll Ingredients

    All these ingredients are easy to find in any supermarket.

    Maple Soy Sauce:

    • 1 tablespoon organic maple syrup
    • 1 tablespoon soy sauce

    Dynamite Sauce:

    • ½ cup olive oil mayonnaise
    • 1 tablespoon sriracha
    • ¼ teaspoon toasted sesame oil

    Dynamite Roll Ingredients:

    • Sushi/sticky rice (approximately 1 cup of uncooked rice, prepared according to package instructions)
    • 2 nori sheets
    • 3-4 tempura shrimp (I buy the box of frozen ones to re-heat. Then, I cut three in half so that there are six pieces.)
    • Cucumber, sliced
    • Avocado, sliced
    • Mango, sliced
    • Sesame seeds, for garnish

    How to Make Dynamite Rolls

    How to Cook Sushi Rice

    1. Soak and rinse the rice in a large pot full of water four to five times to remove all of the starch and dirt. Soak the rice for 30 minutes to 1 hour.
    2. Rinse the rice and transfer it to a colander. Allow it to rest for 30 minutes.
    3. Using a rice cooker (or you can cook the rice in a pot over low heat), cook the rice until the water is absorbed and the rice is tender. It will take about 10 to 12 minutes on the stovetop.
    4. Once the rice is cooked, transfer it to a large bowl and set it aside.
    5. In another bowl, mix vinegar, sugar, and sesame oil together. Then, pour the mixture over the rice and sprinkle in the sesame seeds.
    6. Gently stir the rice, ensuring that the mixture coats all of the rice.

    How to Make the Tempura Batter

    1. In a large bowl, whisk 1 egg with flour, cornstarch, baking powder, and curry powder. 
    2. Whisk in ice water until the mixture forms a fluid batter.

    How to Make the Tempura Shrimp

    1. Rinse and clean the shrimp.
    2. Heat some oil in a skillet.
    3. Coat the shrimp in the tempura batter, making sure they are completely coated.
    4. Fry the shrimp for about 3 minutes, or until they are golden.
    5. Set the shrimp aside to cool.

    You can use ready-made frozen tempura shrimp and cook them in an air fryer or oven as well.

    Maple Soy Sauce

    1. In a bowl, whisk the maple syrup with the soy sauce. 

    Dynamite Sauce

    1. In a bowl, whisk the olive oil mayonnaise with the sriracha, and toasted sesame oil.

    Assembling the Dynamite Rolls

    1. Place a bamboo mat on a clean surface and cover it with plastic wrap so that the rice doesn’t stick to the bamboo.
    2. Lay 1 nori sheet on the bamboo mat. Spread the rice on the nori in a thin layer. 
    3. Flip the nori sheet so that it is facing up and the rice down. Place some fried tempura shrimp, cucumber, avocado, and mango along one edge, being careful not to add too many ingredients.
    4. Top the filling with some of the dynamite sauce and maple soy sauce.
    5. Using the bamboo mat, roll the nori with the filling. Sprinkle with some sesame seeds.
    6. Cut the roll into bite-sized portions. Drizzle the sushi pieces with some dynamite sauce. Repeat the process to use up the remaining ingredients.
    7. Serve and enjoy.

    How to Store Dynamite Rolls

    How to Store Dynamite Rolls in the Fridge

    1. Wrap each roll with clear film or plastic wrap.
    2. Place the sushi rolls in a container with an airtight lid and place them in the refrigerator immediately.
    3. Properly stored, dynamite rolls can last for 24 hours in the fridge.

    How to Store Dynamite Roll Sushi in the Freezer

    You can also store dynamite rolls in the freezer.

    1. Wrap the rolls tightly in plastic wrap.
    2. Then, place them in an airtight container, and into the freezer.
    3. Properly stored, dynamite rolls can last in the freezer for about 2 to 3 days.
