I don't make crunchy peanut butter no-bake cookies very often because I can't resist eating the entire batch! These no-bake cookies take about 15 minutes from start to finish and have the perfect combination of peanut butter, chocolate, and oatmeal.

Ingredients
  • 1/2 cup salted butter
  • 2 cups sugar
  • 1/2 cup skim milk
  • 1/4 cup unsweetened baking cocoa
  • 1 tsp vanilla extract
  • 3 cups quick-cooking oats
  • 1/2 cup crunchy peanut butter
Instructions
  1. Line counter with parchment paper or foil. Place quick-cooking oats and crunchy peanut butter in a large bowl; set aside.

  2. Combine butter, sugar, milk, and baking cocoa in a medium saucepan. Bring to a boil over medium heat, stirring frequently. Boil 2 minutes, stirring constantly. Remove from heat.

  3. Pour cocoa mixture into bowl with oats and peanut butter. Add vanilla and stir until thoroughly combined. Use a medium cookie scoop to quickly drop batter by rounded tablespoons onto parchment paper. Let cool completely before storing.
