Pinned & prepped: Taco Bell chicken quesadillas

You all know by now that our family is a huge fan of Taco Tuesday. Our usual fare is ground turkey tacos with a side of buttermilk cornbread but sometimes I mix it up and we’ll have fish tacos with chipotle mayo, crock pot chicken tacos or our family’s favorite baked creamy chicken taquitos.

Looking for a new Taco Tuesday recipe to try (and another way to use rotisserie chicken), I found this knock-off recipe for Taco Bell quesadillas. The reviews on these chicken quesadillas boasted five stars and the recipe was an easy one—a double win. I did have to pick up a jar of sliced jalapenos but everythign else I had on hand.

Yes, our fridge is always stocked with American cheese slices. Don’t judge.

True to form, these Taco Bell chicken quesadillas were easy. I did use a mix of Colby-Jack cheese rather than the separate cups of shredded cheddar and Monterey Jack. And like I mentioned earlier, I went with rotisserie chicken instead of the chicken tenderloins. I think it added to the delicious flavor of these chicken quesadillas.

And delicious they were. In fact, when I got home later that night (I left Nathan in charge of Taco Tuesday), the entire family RAVED about the quesadillas.

I’m pretty sure it was my family’s most favorite Taco Tuesday EVER.

These chicken quesadillas are definitely going in our menu rotation. They might even nudge out those ground turkey tacos. (Mom, you can thank me later.)

What you’ll need for the original recipe:

Mayo
Minced jalapenos, slices
Jalapeno juice, from minced jalepenos
Sugar
Cumin
Paprika
Cayenne pepper
Garlic powder
Salt
Flour tortillas
Chicken tenderloins
Shredded cheddar cheese
Shredded monterey jack cheese
American cheese

    I love the idea of a Taco Tuesday. How fun! I also love that you’ve topped your tacos with avocado slices! Avocados are one of my go-to add-ons to give dishes just a bit more flavor and fiber.

      I agree. Avocados rock when it comes to cholesterol as well. They help get rid of the bad and build up the good. I garnish with avocado any time I can.

    Yum… except for, you guessed it, the American cheese. My kids would love it all though! Oh… and I’m not judging. Much.

      Kristen, we are totally friends. We also love throwing those slices on hamburgers (and yes, half the time we use pre-made frozen patties). ;)
