My friend Kelli has some of the yummiest recipes, one of them being this super quick, super easy, totally delicious tomato artichoke soup. Though not a hit with the entire family, it is definitely a keeper because it was a hit with the grownups. (The kids can fend for themselves, dang it.)
You should have most everything in your fridge and pantry. If not, you can easily stock up at the grocery store. I love recipes you can make last minute by grabbing this and that from your kitchen! We paired this soup with a side of hot Pugliese bread. Mmmmm, good!
Tomato Artichoke Soup
3 T olive oil
1 yellow onion, chopped
1 tsp dried thyme
1 tsp dried basil
1 tsp salt
1/2 tsp pepper
2-3 cloves garlic, minced
1 28-oz can diced tomatoes
1 15-oz can artichoke hearts, drained and chopped
4 to 5 cups chicken broth
1 cup sour cream (I used light sour cream and it still tasted great!)
Saute onion in olive oil until onion is softened and slightly browned. Add thyme, basil, salt and pepper and continue to saute. Add minced garlic and saute for 30 seconds, then add tomatoes, chopped artichoke hearts and chicken stock. Bring to a boil, reduce heat and simmer for at least 30 minutes. When ready to serve, whisk sour cream with one cup of the soup before adding to the soup.
