I love the holidays for many reasons and appetizers is one of them. They seem to be in full force between December 1st and January 1st and I can never get enough (especially if it’s hot artichoke dip).
I must admit, my recipe book is lacking in crock pot dip recipes so I googled a few and came up with what I thought sounded the most delicious. Of course, you could stick with the sure thing: Lara’s Easy Crock-Pot Sausage Dip. I know Lara and I know she would only make the most delicious of dips!
Slow Cooker Reuben Dip
1 (16-oz) jar sauerkraut, drained and chopped
1 (8-oz) package cream cheese, softened
2 c shredded Swiss cheese
2 c shredded cooked corned beef
1/4 c Thousand Island dressing
Combine the sauerkraut, cream cheese, Swiss cheese, corned beef and Thousand Island dressing in slow cooker. Cover and cook on Low for 1 1/2 hours or High for 45 minutes or until hot and cheese is melted. Stir occasionally while cooking. Serve with cocktail rye, crackers or tortilla chips.
Slow Cooker Cheesy Chicken Nacho Dip
1 (14-oz) can ROTEL, drained
1 (1-lb) loaf Velveeta cheese, cubed
2 chicken breasts, cooked and shredded
1/3 c sour cream
1/4 c diced green onion
1 1/2 T taco seasoning
2 T minced jalapeno pepper (optional)
1 cup black beans, drained and rinsed
Place the tomatoes, cheese, chicken, sour cream, green onion, taco seasoning and jalapeno pepper into slow cooker. Cook on High, stirring occasionally until cheese has melted and the dip is hot, 1 to 2 hours. Stir in black beans and cook 15 minutes to heat thoroughly. Serve with tortilla chips.
Slow Cooker Artichoke & Spinach Dip
1 (9-oz) box frozen spinach, thawed and drained
1 (14-oz) can quartered artichoke hearts, drained and chopped
1/2 c refrigerated Alfredo pasta sauce
1/2 c mayo
3/4 tsp garlic salt
1/4 tsp pepper
1 c shredded Swiss cheese
Combine all ingredients in slow cooker. Cover and cook on Low for 2 to 4 hours. Serve dip with sliced French bread, baguette, crackers or tortilla chips.
