I am finally going to join book club.
I probably won’t lead any life-changing discussions—heck, I’ll be lucky if I can remember more than the book’s plot—but I will bring some tasty dishes to each book club get-together. I’m thinking once the weather turns a bit chill (or at least less than today’s 90-plus degrees), I’ll bring this slow cooker Bacon & Cheese Dip with a side of crackers, French bread and maybe even tortilla chips. How can you go wrong when bacon is among the list of ingredients and in the title?
Bacon & Cheese Dip
16 slices bacon, diced, fried and drained (I’m sure you could use turkey bacon if you prefer.)
16 ounces cream cheese, cubed, room temperature
4 c shredded cheddar cheese (I think I’ll use medium cheddar.)
1 c half-and-half
2 tsp Worcestershire sauce
1 tsp dried minced onion
1/2 tsp dry mustard
1/2 tsp salt
Dash of hot sauce
Put all ingredients except bacon in crock pot and cover. Cook on low, stirring occasionally, for about 1 to 2 hours or until cheese is melted and mixture is hot. Taste and adjust seasonings. Add bacon and keep on low to serve.
I know I’ve had a similar dip from a crock pot, but I believe it used ground beef or sausage in addition to—or in place of—the bacon.
Anyone else familiar with that dip? I’d love the recipe!
