I have to have sweet pickle relish and egg's in my macaroni salad.
This is what I do.
Boil eggs about 6 we like a lot.
Elbow macaroni, boiled and drained.
Mayonnaise
Tuna
Green onions
A little bit of fresh squeezed lemon juice
A touch of sugar
Mini sweet colored peppers, diced pretty fine
A touch of spicy brown mustard
Salt and pepper to taste.
In a large bowl put tuna and break it up.
Add cooked noodles, onion, relish, peppers, chopped eggs, a squeeze of fresh lemon juice, mustard, sugar, salt and pepper. Mix until blended and everything is coated. Serve now or chill for later.
