The other night—okay, almost every night—I was craving cookies. (The cravings usually get pretty heavy around the same time each month…go figure.) Wanting to try a new cookie recipe, I stumbled upon these oatmeal chocolate coconut chewy cookies.
I’m so glad I stumbled. Best trip ever.
Let me tell you right now, the photo doesn’t do these babies justice. Not one of the photos from the original recipe on Allrecipes.com accurately conveys how yummy these oatmeal chocolate coconut chewy cookies are. They’re so yummy, we ate them before I took the lens cap off my camera. You’ll simply have to trust me when I say they’re really, really good…and try them this weekend. Or sooner.
Like the other freezer-friendly cookie recipes I’ve posted, these oatmeal coconut cookies are delicious crisp and cold. We taste-tested quite a few…and by quite a few I mean a couple dozen. (I’m all about verifying cookie deliciousness for ITRML readers. It’s hard work but it’s worth it.) Of course, you should probably make your own batch of oatmeal chocolate coconut chewy cookies and taste-test them just to be sure.
What you’ll need for the original recipe:
Semisweet chocolate chips
Chopped walnuts (optional)
