I kind of like to make from-scratch birthday cakes for my family. The kids get themed cakes like Livi's doll cake while the adults simply get whatever combo of cake and frosting they desire. My sister always requests Pillsbury Funfetti cake and frosting, and in the past that was the one cake I'd make from a box and top with the accompanying Funfetti frosting.
This year was different. This year I finally realized I could totally make this cake from scratch.
I'm slow, I know.
I figured all it took to make a homemade Funfetti confetti cake was a tasty white cake recipe, yummy vanilla frosting and a few handfuls of jimmies.
I was so right.
For a confetti cake, I decided to use this simple white cake recipe from Allrecipes.com because it sounded a bit lighter and fluffier than the one I'd used for Livi's doll cake. Then I found what sounded like a good vanilla frosting recipe, but it wasn't good enough for me to want to use again. I think next time I make my sister her favorite confetti cake, I'll use the quick vanilla buttercream frosting I used for Livi's cake.
Now, you might be wondering why I don't have any photos of the inside of this sweet-looking confetti cake. Well, I have two good reasons:
- It was evening and evening lighting truly is the worst for food photography.
- I totally spaced adding the jimmies until the cake batter was in the pans. I had to try to gently mix in the jimmies as best I could without pulling up any of the flour coating the pans. Let's just say the center of the confetti cake had a high concentration of confetti.
Next time I want to try is this coconut-cream cheese frosting on the confetti cake. For some reason I think that combo sounds simply delicious.
Speaking of coconut, my friend's daughter-in-law has a TO DIE FOR triple-layer coconut cake. I'm begging her for the recipe so I can eat it share it with you. Keep your fingers (and toes and legs and eyes) crossed!
