My daughter’s birthday is in October so her birthday parties have often been Halloween-themed. One year I even made a spider cake complete with ooey gooey pudding guts inside. Gross but oh, so cool!
This year Madison chose Halloween cupcakes, graveyard style, complete with RIP headstone. She found the recipe on Allrecipes.com, one of my favorite recipe websites. I checked out the photos others had submitted and tweaked the recipe just a bit. Here was the end result:
I wish I’d been able to tint the frosting a bit darker and taken the time to pipe it so it looked more grass-like, but I still think it turned out well. The tombstones are the inside of a Nutter Butter cookie (peanut butter filling scraped off and eaten by yours truly) and the “dirt” is crushed Oreo cookies.
Wanting to throw a little surprise into the mix, I tried these self-filled cupcakes and dyed the filling orange. Unfortunately my filling was rather runny (serves me right for using low-fat cream cheese) and the final result was a bit disappointing even though it was tasty. Next time I’m going with my favorite surprise cupcake, the chocolate-chip cookie dough cupcakes I made for Evonne’s baby shower. They are still my all-time favorite–YUM!
