Today’s green smoothie recipe is by my good friend Pam Baumeister from That Damn Pam. Pam is a fellow yoga enthusiast, cyclist and triathlete. She is amazing!
Just like Emily, I love to stay healthy, write and work out. She’ll kick my butt in just about everything we compete in (don’t challenge her to Words with Friend, by the way). So, guest posting on her blog is a real treat.
I don’t eat sugar, but I enjoy a something sweet and healthy after a hard workout. This green smoothie fits the bill and words as a good recovery drink, since it has potassium, calcium, Vitamin A and C. This green-ish smoothie tastes like a frothy chocolate peanut butter shake. What makes it green is the zucchini, which is plentiful any time of the year. If you don’t drink dairy, you can substitute the milk for almond milk or soy/rice milk. Drink this shake right away as the zucchini does tend to get a bit dodgy if left out for too long. This recipe is hard to mess up and it’s all based on what you like. Add more banana if you like your smoothies on the sweet side.
Green Smoothie Recipe
1 1/2 to 2 cups milk (I use whole milk)
1 zucchini, cut in chunks and frozen
1 banana, cut in chunks and frozen
1/2 cup natural peanut butter (I like Adam’s)
1 to 3 T unsweetened cocoa powder, to taste
Note: I always freeze over-ripe bananas and zucchini ahead of time. Make sure you cut them into bite-sized chunks before freezing to make it easier on your blender.
Blend and enjoy!
