    • Avocado: Avocado is the second main ingredient in this sushi roll recipe, so if you want to make delicious and fresh avocado sushi you need to pick a perfect avocado for that. To pick the avocado, Just Put your avocado in the palm of your hand and give it a gentle squeeze. A ripe avocado should be firm with darker colored skin but slightly squishy. If it’s too hard, your avocado is not ripe. On the other hand, if it has too much give, it’s overripe.
    • Sushi Rice: Use high-quality short-grain rice and cook it in the Japanese way, which means steaming the rice that has been seasoned with sushi vinegar. Some of the best sushi rice brands that I’ve worked with are Lundberg Organic California Sushi Rice, Botan Calrose Rice, and Nishiki Premium Grade Rice, all of these will give an excellent taste to your Avocado roll sushi.

    Eel Avocado Sushi Roll Ingredients

    Sushi Rice

    • 2 cups white short-grain rice
    • 3 cups water
    • ⅓ cup rice vinegar
    • ⅛ cup cane sugar
    • 1 tbsp avocado oil
    • pinch of salt

    • 3-4 nori sheets
    • 2 large avocados, peeled, pitted, and sliced
    • Cooked (grilled/steamed) eel slices

    • masago/ tobiko (optional)

    How To Make Eel Avocado Roll

    Make Sushi Rice

    1. In a saucepan, heat the water until boil, then add rice and reduce heat, cover, and let simmer for 20 minutes, or until the rice has absorbed the water. Rice can also be cooked in an Instant pot or rice cooker, my preference.
    2. In a small saucepan combine rice vinegar, avocado oil, cane sugar, and salt.
    3. Cook on medium-low heat until the sugar dissolves, it takes about 3-5 min
    4. Pour the mixture into cooked warm rice then Stir till the mixture is absorbed. 
    5. Let cool aside.

    Make The Eel Avocado Roll

    1. Laying out the bamboo mat with a piece of plastic wrap on top, as will make the cleaning easier and prevent the rice from sticking to the mat.
    2. After folding the nori sheets in half and splitting them, go ahead and place one half on top of the bamboo shining side facing down.
    3. Now, take about ¾ cup of the sushi rice and spread it evenly over the nori then sprinkle the sesame seeds.
    4. Carefully, flip the nori sheet, so the rice is face down and the nori is up.
    5. Add the avocado slices and the cooked eel in the middle of the norie.
    6. To close the roll, place your thumbs underneath the bamboo mat in order to lift the edge up and over the filling then roll the bamboo mat away from you while pressing the rice and filling together.
    7. Keep rolling until the ends meet.
    8. Move your eel roll to a cutting board then cut it into about 8 pieces.
    9. Finally, drizzle the eel sauce on top of the rolls, you can also top with some masago or tobiko for some extra delicious flavor.
    10. Serve and enjoy!

    Storing in the fridge

    1. Start by wrapping each roll with clear film or plastic wrap tightly.
    2. Next, go ahead and place the sushi rolls into a dry container with an airtight lid then into the refrigerator immediately.
    3. Properly stored, Eel avocado sushi rolls can last for 24 hours in the fridge.

    Storing in the freezer

    You can store also it in the freezer

    1. As refrigerating, you want to ring out any excess water, then wrap the rolls leftovers tightly in plastic wrap and make sure to seal it to prevent any air from reaching the food.
