If you're a fan of coconut and enjoy a good scone, you'll love these glazed coconut scones featuring shredded coconut inside and out! Makes approx. 12 to 14 large scones.

  • 2½ cups flour
  • ⅓ cup sugar
  • 1 T baking powder
  • ½ tsp sea salt
  • 1 cup unsweetened shredded coconut
  • ½ cup cold unsalted butter, cubed
  • ½ cup milk
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1 tsp coconut extract
  • 2 T milk
  • ½ tsp coconut extract
  • 1 cup powdered sugar, plus more if needed
  • 1½ cups shredded coconut
  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper; set aside.
  2. Stir together flour, sugar, baking powder, salt and coconut in a large bowl. Work cubed butter into flour mixture with fingers until crumbly with pea-sized pieces of butter.
  3. Whisk together milk, eggs, vanilla and coconut extract in a medium bowl. Stir into flour mixture until just combined, using hands to lightly knead until no loose flour remains.
  4. Divide dough into 12 to 13 pieces. Place each piece on cookie sheet and form into a mound.
  5. Bake 15 to 18 minutes or until golden brown. Remove to wire rack and cool before topping with glaze.
  1. Whisk together milk, coconut extract and powdered sugar in a medium bowl to make a thick glaze. Add more powdered sugar if necessary.
  2. Dip tops of cooled scones in glaze followed by shredded coconut, pressing into place.
  3. Store leftovers in an airtight container.
