Pressure Cooker Cafe Rio Sweet Pork

I took our favorite slow cooker Cafe Rio pork and converted it into an equally scrumptious pressure cooker Cafe Rio pork. Don't forget the creamy cilantro dressing!

Ingredients
  • 3 lb pork roast cut into 1" cubes
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 3 T butter
  • 2 T soy sauce
  • ½ cup lemon juice
  • 1¼ to 1½ cups brown sugar
  • 1 tsp sea salt
  • ½ tsp pepper
Instructions
  1. Preheat pressure cooking pot using the saute setting. Add onion, garlic and butter to the pot and saute until onion is softened, about 3 minutes.
  2. Add pork roast and ¾ cup water to pressure cooking pot. Stir to evenly distribute onion mixture. Pressure cook on high 25 minutes. Turn off pressure cooker when timer beeps and let pressure release naturally for 10 minutes. Release remaining pressure. Carefully remove lid once valve drops.
  3. Pour the roast into a colander to drain juices; reserve ½ cup of liquid.
  4. Shred pork and return to pressure cooker. Add soy sauce, lemon juice, brown sugar, salt, pepper and ½ cup reserved liquid.
  5. Pressure cook on high 10 minutes. Turn off pressure cooker when timer beeps and let pressure release naturally for 10 minutes. Release remaining pressure. Carefully remove lid once valve drops.
