These festive 4th of July cake mix cookies feature blue velvet cake mix, cream cheese frosting & red sprinkles and easily double as Dr. Seuss cookies! Makes 2 to 3 dozen depending on size.

  • 1 (16.5-oz) Duncan Hines Blue Velvet Cake Mix
  • ⅓ cup oil
  • 2 eggs
  • 1 can cream cheese frosting (or homemade frosting; see notes)
  • Red sugar sprinkles
  1. Preheat oven to 350 degrees.
  2. Mix cake mix, oil and eggs in a large bowl until thoroughly combined.
  3. Place a heaping teaspoon of dough (or tablespoon for larger cookies) 2 inches apart on ungreased cookie sheet.
  4. Bake 10 to 12 minutes or until center is set. Remove from oven and cool completely before frosting.
  5. Frost with cream cheese frosting and dust with sprinkles. Serve immediately or store in an airtight container for up to 2 days.
My favorite homemade cream cheese frosting is from these carrot cake sandwich cookies. It's the best!
