Chewy Chocolate Chip Cookies

Shortening is the secret to extra fluffy, extra chewy cookies. Best eaten fresh from the oven.

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp salt
  • 2¾ cups flour
  • 1½ cups semisweet chocolate chips
  1. Preheat oven to 350 degrees.
  2. Cream shortening and sugars together in a large bowl until light and fluffy (about 2 minutes). Add eggs and vanilla; mix until thoroughly combined.
  3. Whisk together baking soda, salt and flour in a separate bowl. Add to shortening and sugar; mix until combined. Fold in chocolate chips.
  4. Place rounded tablespoons about 2 inches apart on a non-stick baking sheet or silicone mat. Bake 10 to 11 minutes or until edges are light golden brown.
  5. Store in an airtight container.
